Potato Masal Curry

Notes:
Serves - 4

Ingredients: 
  1. Potato - 1/4 kg
  2. Onion - 1
  3. Green Chilli -2
  4. Shallots (small onion) - 8
  5. Coconut oil - 1 tsp
  6. Salt - As needed.
  7. Turmeric Powder - 1/2 tsp
  8. Mustard seeds - 1/4 tsp
  9. Red Chilli - 2
  10. Curry Leaf - 5
  11. Red Chilli Powder - 1 tsp
  12. Coriander Powder - 2 tsp
  13. Garam Masala - 1/2 tsp
  14. Coconut Milk - 1/4 cup
Directions:
Peel the skin on the potato. Cut them in to medium sized pieces.
Dice the onion in to small pieces.
Split the green chillies lengthwise.
Peel the shallots and cut them in to 4 peices.

Boil the potato in water along with salt, turmeric powder and shallots (5).
Take off heat when the potato is fully cooked.

Heat oil in a pan and season with mustard seeds, red chilli, shallots (3) and curry leaf.
When the Shallots starts to change darker in color, add red chilli powder, coriander powder and garam masala.
Fry them for a minute and take off heat.
Mix these contents with the potato prepared above and let it boil for 1 minute.
Keep Stirring.
Add  the coconut milk and let it boil for another 1 minute.
Mix the contents well and take off heat.
