Green Mango - Pachadi

Notes:
Serves - 4

Ingredients: 
  1. Green Mango - 1
  2. Green Chilli - 2
  3. Sugar - 50 g (add more if mango is very sour)
  4. Salt - 1/2 tsp
  5. Water - 1/2 cup
  6. Mustard Seeds - 1/4 tsp
  7. Urad Dal - 1/4 tsp
  8. Cashew - 25 g
  9. Red Chilli (Dry) - 2
  10. Curry Leaf - 4
  11. Ghee - 50 g (add more if needed)
Directions:
Cut the mango in to long thin slices with the skin.
Cut the green chillies in to small pieces

Add mango, green chillies, salt and water in to a pan.
Bring the contents to boil.
When it starts to boil, add sugar.
Let it boil for another 30 seconds and take off heat.

Heat ghee in a pan and season with mustard seeds, urad dal, cashew, red chilli and curry leaf. 
When the dal starts to change darker in color take off heat.
Mix these with the contents prepared above.
