Sweet Mango - Pachadi

Notes:
Serves - 4

Ingredients: 
  1. Ripe Mango - 1
  2. Chilli Powder -2 tsp
  3. Jaggery - 100 g
  4. Salt - 1/2 tsp
  5. Water - 1/2 cup
  6. Mustard Seeds - 1/4 tsp
  7. Urad Dal - 1/4 tsp
  8. Cashew - 25 g
  9. Red Chilli (Dry) - 2
  10. Curry Leaf -5
  11. Ghee - 50 g (add more if needed)
Directions:
Cut the mango in to long thin slices with the skin.


Add mango, chilli powder, salt and water in to a pan.
Bring the contents to boil.
When it starts to boil, add jaggery.
Let it boil for another 30 seconds and take off heat.
Make sure the jaggery has dissolved.

Heat ghee in a pan and season with mustard seeds, urad dal, cashew, red chilli and curry leaf. 
When the dal starts to change darker in color take off heat.
Mix these with the contents prepared above.
