Egg Avial

Notes:
Egg Avial is a side dish usually served with meals which can be made with or without Drumstick.
Serves - 4

Ingredients: 
  1. Egg - 4
  2. Drumstick - 2
  3. Red Chilli -6
  4. Jeera - 1tsp
  5. Coconut (shredded) - 1 cup
  6. Mustard Seeds - 1/4 tsp
  7. Shallots (Small Onion) - 2
  8. Curry Leaves - 5 
  9. Oil - 1 tsp
Directions:
Boil the eggs and split them in to two.
Cut the drumsticks in to desired lengths and split them in to two.
Peel and cut the shallots in to small pieces.

Coarsely grind the red chillies (4), jeera and shredded coconut.
(Do not grind them to a fine powder)

Take the drumstick on a pan and add water until they are immersed.
Add salt and bring it to boil until it is cooked.
Add the coarsely grinded mix prepared before to the pan and stir it.
Place the eggs on the pan with yolk side facing down.
Let it boil/cook until the water level recedes and then take off heat.

Heat oil in a pan and season with mustard seeds, red chilli (2), shallots and curry leaf. 
When the Shallots starts to change darker in color take off heat.
Mix these with the contents prepared above.
