Bottle Gourd Avial

Notes:
Serves - 4

Ingredients: 
  1. Bottle Gourd (sorrakkai) - 1/4 kg
  2. Coconut Oil - 3 tsp
  3. Shallots (small onion) - 3
  4. Green Chilli - 2
  5. Salt - As Needed
  6. Curry Leaves - 8
  7. Coconut (shredded) - 4 tsp
  8. Mustard Seeds - 1/4 tsp
  9. Urad Dal - 1/4 tsp
Directions:
Peel and cut the Bottle Gourd in long slices with medium thickness.
Dice the shallots in to small pieces.
Slit the Green Chillies.

Heat the coconut oil in a pan and Fry the diced shallots and green chillies. Add salt and bottle gourd and let it cook (closed) until it is cooked.

Add the shredded coconut to the pan and saute for 30 seconds and then remove from heat.
Fry the curry leaves in 1/2 tsp coconut oil and add it to the prepared avail and stir.

Heat oil in a pan and season with mustard seeds, urad dal and curry leaf. 

When the dal starts to change darker in color take off heat.
Mix these with the avial prepared above.
