Mutton Kuzhambhu


Notes:
Serves - 4

Ingredients: 
  1. Mutton (Goat) - 1/2 kg
  2. Oil - 1/2 tsp
  3. Salt - As Needed
Group 1
  1. Green Chilli - 2
  2. Ginger - 50 g 
  3. Shallots (small onion) - 4
  4. Garlic - 50 g
Group 2
  1. Red Chilli - 7
  2. Chilli Powder - 100 g
  3. Coriander Seeds - 100 g
  4. Turmeric Powder - 1 tsp
  5. Shallots - 20 
  6. Mustard Seeds - 1/4 tsp
  7. Curry Leaves - 8
  8. Garam Masala - 1 tsp

Directions:
Clean & Cut mutton into small or medium sized pieces.

Smash together the ingredients mentioned in Group 1.
Apply this mix on to the mutton pieces and mix well.
Add 1/2 tsp oil, 1 cup of water and pressure cook (5 or 6 whistles) or until the meat is cooked.
Take off heat and keep it aside.

Heat 1 tsp oil in a pan on medium heat.
Add Red Chillies and Coriander Seeds.
Fry them until the coriander seeds turns golden brown.
Take off heat and separate them from the oil.
Grind the fried red chilli and coriander to a powder form.

Peel and cut 20 shallots in to two pieces
Heat the pan with oil and season with mustard seeds, red chilli, shallots (3) and curry leaf.
When the Shallots starts to change darker in color, add some some gram masala.
Fry them for a minute and take off heat.

Add everything together with the meat in the cooker.
Add salt as desired and heat the contents int he cooker for a few minutes.
